It has been over two months now that I have been working from home. The experience was a bit frustrating at first but I have grown fond of it and some of the freedoms it offers. One of those freedoms happens to be cooking . I have been able to invest time in different kinds of meals from shrimp and pasta to pancakes. Let me give you a sample of my quarantine cuisine.

One of the first meals I tried recently was something which was more akin to what I enjoyed when I visited Dominica last year. It was meant to be wholesome and hearty. It didn’t disappoint. I was served with stewed beef, boiled plantains, basmati rice, slices of avocado and a salad on the side. Although it wasn’t my greatest culinary masterpiece. I think it was well worth it as my first quarantine cuisine.

With more cooking, I become more comfortable and confident with the type of food I handled. With my second quarantine delicacy, I tried my hand at seafood, more specifically shrimp. I decided to mix shrimp and pasta together. I prepared a special pesto sauce to with my pasta and sprinkled it with Parmesan cheese. The shrimp was sauteed in mix of butter, black pepper, and parsley flakes. I think the only thing that would have made it greater is large glass of white wine.

One the dishes I have gotten fond of making basically makes use of some of the over ripened bananas I have around the house. I have started using those bananas to flavour my pancakes. I would pound my bananas into the pancake mix and mix with milk and and an egg. That little concoction would always turn out light, fluffy and tasteful especially when drizzled with maple syrup and topped with a spread of butter.
So, there you have it. Three simple meals to pass the time while in quarantine. A hearty stewed beef for those heavy meals, a shrimp and pasta seafood to mix things up and a simple fruit flavoured pancake are all delightfully tasty quarantine cuisines you can try at home.
